It’s the holidays, which means for many of us, a time when we indulge in those delicious dishes and tasty foods we just don’t eat the rest of the year. I can think of a few – hominy casserole, baked sweet potatoes with marshmallows and Christmas pies in 20 different varieties. This year, I wanted to try something different for my holiday treat. To my fortune, Dairy MAX has been pairing with some great talent to create new recipes.
Enter – Cheddar and Bacon Cheesecake.
Exactly – how can cheddar and bacon TOGETHER be anything but awesome?


It was a very simple recipe, from preparation to baking. I took this dish to a Christmas party and it was a hit – both creamy and fluffy and full of flavor. Full disclosure: I used 1/3 less fat cream cheese (I know, I know, I can’t deny the registered dietitian in me) and low-sodium bacon (it was what we had at our house) and I still served this to rave reviews from self-proclaimed food critics. To create a different taste, next time I might try smoky cheddar. Pair it with some dried fruit and nuts, whole grain crackers and maybe even a favorite tart jelly or chutney, and you can take this to any holiday party, at any time of the year.

Normally, I shy away from "cheesecakes" but this one looks so easy! May have to add this to the Christmas eve menu!
