Joann Knox has done everything from owning a tearoom to serving on a city council. With a Bachelor of Science in home economics from Tarleton State University and a Level 5 Certification from the Texas Association for School Nutrition, she worked for school districts including Abilene, Big Spring and Mineral Wells, and for the Texas Department of Agriculture. She was a Rotary International Paul Harris Fellow and a Chamber of Commerce Woman of the Year, and has served on boards for the American Cancer Society and the American Heart Association. Joann lives in Lago Vista, Texas, and has two grown daughters. 

Weirdest thing you’ve ever eaten:  
Fried scorpions.

Best advice you’ve ever received: 
What other people think about me is none of my business.
