Monica Silva, M.S., RDN, LD (Texas)

Program Coordinator, Health and Wellness 

Monica Silva always dreamed of teaching nutrition out of her home; now she’s thrilled to work with Dairy MAX to build nutrition initiatives throughout the community. She holds a Bachelor of Science in food science and technology from Texas A&M University and a Master of Science in human nutrition from Texas State University, where she earned multiple scholarships and an Outstanding Graduate Student Award. Monica previously worked as a nutrition coordinator for Texas State University and a nutrition assistant at the Johnson Center for Child Health and Development. A native of Austin, Texas, Monica also loves to volunteer by cooking for the homeless at Home Cook Fridays.

Favorite physical activity: 
Running.

Weirdest thing you’ve ever eaten: 
Crickets.

Your food/nutrition mentor growing up: 
My mom, because she really taught me that all foods fit into a healthy diet. She didn’t teach me that foods were good or bad, just delicious. As a child, I was just as likely to eat my broccoli as I was to grab a cookie.
