  • 1 ¼ pounds chicken, fully cooked, diced
  • ¾ cup yogurt, Greek, plain, low-fat
  • ¼ cup hot sauce, Frank’s
  • ¼ cup mayonnaise
  • 6.5 ounces cheese, cheddar, shredded
  • 2.2 ounces or ½ cup celery, diced ¼"
  • 4.3 ounces or 3 ¼ cups lettuce, romaine, shredded
  • 5.3 ounces or 1 ½ cups and 2 tablespoons carrots, shredded

Instructions

Critical Control Point (CCP): No bare-hand contact with ready-to-eat food.

  1. Thaw tortillas at room temperature.
  2. Thaw chicken in refrigerator overnight.
    CCP: Hold at 41° F or below.

  3. Combine the yogurt, hot sauce and mayonnaise in a large bowl. Mix thoroughly.
  4. Add thawed diced chicken, shredded cheese and celery. Using a spatula, fold to combine.
  5. Place a #10 disher of chicken slightly off centered on tortilla. Top with ¼ cup romaine and 2 tablespoons of shredded carrots. Roll into a wrap.
