Dr. Liset Vasquez is a nutrition and community health expert, practitioner, researcher and educator, with over 20 years of experience improving the health of high-risk minority children and their families in clinical, school and community settings.  

Dr. Vasquez previously worked as assistant professor of community health at Texas A&M University-San Antonio, Texas program manager for the Alliance for a Healthier Generation and nutrition consultant on obesity-related grants from both U.S. Department of Agriculture and National Institutes of Health. She also worked as nutrition counselor for children and youth and as a health coach focused on behavior modification. Within her community, she has also served in numerous leadership roles, including past co-chair of the San Antonio Health Literacy Initiative and past chair for the San Antonio Mayor’s Fitness Council Healthy Schools initiative. Dr. Vasquez is passionate about food insecurity and chronic disease among families and college students. In her current role, she has participated in university wide initiatives that influence sustainable nutrition and health.
