Dietetic Internship Director and Instructor in Nutrition, Dietetics and Food Management Program, University of Central Oklahoma

Katy Soper is the Dietetic Internship Director and an Instructor teaching both undergraduate and graduate level courses for the Nutrition, Dietetics and Food Management Program at The University of Central Oklahoma (UCO). She is a member of the Healthy Campus Initiative at UCO and serves as the Advisor for the UCO Student Food and Nutrition Club.  

Formerly, she was the Program Coordinator and Clinical Dietitian for the OU pediatric multidisciplinary weight management clinic, Healthy Futures. She earned her Bachelor of Science degree in Nutrition, Dietetics & Food Management from The University of Central Oklahoma in 2013. During her Dietetic Internship, she also obtained a Master of Science degree in Food & Nutrition Science at The University of Central Oklahoma in 2014. She completed the Certificate of Training in Childhood and Adolescent Weight Management in 2015 through the Academy of Nutrition and Dietetics Commission on Dietetic Registration. She has been an Academy of Nutrition and Dietetics member since 2010. She is also a member in the Oklahoma Academy of Nutrition and Dietetics where she is currently serving as the Secretary-elect. She is a regular participant in OkAND’s Tasty Tuesdays on FOX 25 featuring Oklahoma Academy’s Registered Dietitians in weekly healthy cooking segments. Additionally, she participates and serves the local RD community as a member and officer of the Oklahoma City District Dietetic Association. 

Katy is an Oklahoma native and resides in Oklahoma City with her husband, Jason, and son, Henry. In her free time, she enjoys Boy Scout activities, hot yoga and hiking.
